The 2023 Monterey Rose is a Hawaii vacation in a bottle! Light salmon in the glass, the wine has a raspberry cream nose with a palate of pineapple-orange-guava (POG) and grapefruit pith. The softness of the wine starts to shine over time with delicate notes of rose water and just a touch of salinity, akin to your favorite mineral water. For food pairings you have many options, but I would play with the fruit generosity on the palate and aim for more spice-oriented foods like al pastor, elotes, or spicy Indian curry. For your enjoyment, serve at refrigeration temperature in all-purpose stemware and drink from 2025 -2028.

		Winemaker Notes
			A shift back to Monterey County for our Rose, but still a blend of Pinot Gris and Pinot Noir. Pressed and then cold clarified for 10 days prior to starting fermentation, which was slow and cold for 5 weeks. The wine had a long period to settle and age in stainless steel (7 months).
