
The Paso Robles Cabernet Sauvignon from Integrity rings true to Paso Robles sunshine and terroir – the glass is filled with dark plum and quince paste notes that align with the herbal tones of tarragon, spearmint, cedar, and a touch of vanilla. The wine is lifted by the herbal terpenes and brings up notes of white cherries and fresh rose petals over time in the glass and bottle. The wine maintains structure and profile over time, as do all the Integrity wines. Structurally, the wine is moderate across the board – moderate grip, acid, and alcohol. This makes this Cabernet Sauvignon a wine that would please almost any Cab fan. It’s worth noting the wonderful balance of alcohol given the climate of Paso – a nod to a great call for harvest date to preserve freshness and vibrancy in a wine that can also evolve given time in your cellar. For food pairings I suggest foods with some protein and spice, but only light amounts of fat – for spices think fresh herbs and cracked peppercorns and great sources of protein would be sauteed mushrooms, grilled sirloin, or beef stew.
