Food to pair
You do not need to have any foods with this tasting but having something makes it go way better!

My go to is simple: crackers, cheese, almonds.
  • Experiment with crackers, my first choice is the basic club cracker, I suggest you avoid flavored crackers for the first 2 wines, but those may work with the rose’ and the reds. At the same time a saltine is kinda boring.  Tortilla chips are a hit with a lot of these wines!
  • Cheeses, again experiment, there are basic guidelines but not rules. My go-to would be cheddar, brie, medium strength cheeses. Reserve the blue or gorgonzola for the last 3 wines, but experiment with stinky cheeses with all the wines. Try goat or sheep cheeses if you tend to like those types, particularly with the first two wines. Hard cheeses with the Syrah and Cabernet.
  • Nuts are good- mostly I experience almonds are my first choice. Others would work too, again avoid flavored nuts.
  • I also encourage you try some snacks just to experiment. We share a lot about that on the tasting together
If I was making food to go with these wines:
First 2 wines:
  • Seafood, shellfish, chicken, green veggies like peas, asparagus or green beans. Grilled or butter or cream sauces, not tomato based sauces.
Third Wine:
  • The Rose is super versatile, it could work with the foods the first two wines work with, or what the reds work with.
Fourth, Fifth & Sixth wine:
  • Meats, charcuterie, cured meats, barbeque like ribs and burgers, pasta with garlic or tomato-based sauces, pesto, etc. Salmon or tuna with the Pinot Noir. Barbeque pork, spareribs or Asian grill with the Syrah. Chocolate!
The last wine:
  • Spicy foods, Asian cuisine, Indian foods, a rib-eye steak, Mexican foods! Try it with pepper jelly or even better a small piece of fresh jalapeno with cheese on a cracker, or wasabi peas!
